Buttery Blueberry Cobbler

Ingredients:
* 2 cups fresh or frozen blueberries
* 1 Tablespoon lemon juice
* 1-1/2 cups sugar, divided
* 1/2 cup butter, cubed
* 1 cup all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 3/4 cup whole milk
* 1 large egg, lightly beaten
* Whipped cream or whipped topping
Instructions:
1. In a saucepan, combine the blueberries, lemon juice and 1/2 cup sugar. Bring to a boil; remove from the heat. Set aside.
2. Preheat the oven to 350°F. Add the butter to an 11×7-inch baking pan.
3. Place the pan in the oven until the butter melts.
4. Remove the pan from the oven and set aside.
5. In a small bowl, combine the remaining sugar with the flour, baking powder, salt, milk and egg.
6. Pour the batter into the pan with the melted butter. Do not stir.
7. Spoon the reserved berry mixture over the batter. Again, do not stir.
8. Bake for 40 to 45 minutes or until golden brown.
9. Serve at room temperature with whipped cream or whipped topping.
Notes:
1. Editor’s Tip: Melting the butter should take about three to five minutes. Keep an eye on it so it doesn’t burn.
2. Just 1 teaspoon extract flavor can enhance this blueberry cobbler recipe. Try vanilla extract, almond extract, rose water or orange blossom water.
